Intense exercising results in an increase of two muscle enzymes: creatine kinase and lactate dehydrogenase. Normally these enzymes stay in the muscle but when found in the blood, which often occurs after intense training, they indicate muscle damage.

Antioxidants such as Vitamin C, E and beta carotene, when introduced in large doses, cause a reduction of these enzymes very rapidly. So antioxidants taken in higher than the so-called "RDA values" prevent the normal breakdown of muscle tissue which accompanies strenuous exercise, which is commonly known as the "anticatabolic effect."
